You are right there are hundreds of interesting key bindings available in the Axon.ivy Platform available to increase your productivity. Some were provided by the ivy-core, but the power the platform also derives from the large eco-system of Eclipse and it's associates where we rely upon. As a consequence, it would be a huge effort to re-explain the details of this mature ecosystem.
Take for instance CTRL+O, this opens the 'quick outline' a very well known feature of the Eclipse platform which exists longer than a decade in the java editor and the like. So we naturally also supports this binding in the Process Editor.
There is indeed also a documentation for it, but not in prose: You can examine all key-bindings and commands via the menu: Help -> Preferences -> General -> Keys:
